Weekends are made for pancakes (in my humble opinion) but I’ve not made any for ages since Sophie adores porridge and we’ve got into the habit of always making this!
Lastnight I knew I really fancied pancakes for after our Saturday park run so picked up some berries on the way home in preparation.
This is a completely zero-fuss recipe that takes
minutes to make and taste absolutely delicious too. You really can’t go wrong!
Simple Oat Pancakes
Serves 2
Ingredients
50 ml milk
2 medium eggs (if using large, don’t add as much milk)
1 cup rolled oats
1 teaspoon baking powder
pinch of salt
Optional extras:
Berries, sliced banana, Greek yoghurt & maple syrup to serve
Add the milk, eggs and oats to a blender and whizz together until smooth
Add the baking powder and stir well- leave to rest and bubble for a couple of minutes.
Heat coconut oil in a pan on a medium heat. Add dollops of batter to the pan (roughly 2 spoonfuls) and leave to cook for 2-3 mins until golden. Then flip and repeat.
Serve with a good dollop of yoghurt, scattering of berries and a drizzle of maple Syrup!
